
Chicken in a bowl

Ingredients:
- 1 large chicken
- 150 g bacon
- 3 ripe tomatoes
- 1 large onion
- 3 cloves of garlic
- 0.5 dl Moura Virgin Olive Oil PDO
- 1.5 dl of white wine
- 1 teaspoon sweet paprika
- 1 bay leaf
- 1 bunch of parsley
- Salt and chili to taste
Preparation:
- Trim the chicken, cut it into pieces, put them in a bowl and season with the finely chopped garlic cloves, paprika, salt, chilli and white wine. Wrap and marinate for 20 minutes
- Peel and wash the onion and chop it finely. Remove the rind from the bacon and cut into small cubes. Wash and blanch the tomatoes, remove the skin and seeds and cut into cubes
- Heat the olive oil in a pan, add the drained chicken, bay leaf, parsley, onion and bacon and cook until the chicken is golden brown. Then add the tomatoes and the meat marinade and simmer, stirring occasionally, for about 40 minutes
- Add a little water if necessary while cooking, adjust the seasoning, remove from the heat and serve garnished to taste and accompanied by white rice or mashed potatoes
