Apple and walnut cake

Ingredients:

  • 4 eggs
  • 3 cups of brown sugar
  • 3 cups of flour
  • 1 cup Moura PDO Organic Extra Virgin Olive Oil
  • 1 cup of milk
  • 1 dessertspoon of Royal Powder
  • 1 tablespoon cinnamon
  • 1 cup walnut kernels
  • 3 cups of flour
  • Slivered almonds to taste
  • Blueberries to taste
  • 1 glass of brandy or liqueur wine

Preparation:

  1. Beat the eggs with the sugar, add the milk and stir in, then add the Moura DOP Organic Extra Virgin Olive Oil and stir in. Add a glass of brandy or liqueur wine.
  2. Add the cinnamon and mix well. Add the flour and Royal powder.
  3. Add the chopped apple, half the chopped walnuts and slivered almonds.
  4. When you have a homogeneous mixture, pour the dough into a baking tray previously greased with butter and dusted with flour.
  5. Place the remaining walnuts in halves on top of the pastry and blueberries to taste.
  6. Bake in a preheated oven at 190º for about 40 minutes and don't forget to test the toothpick.
