Parsley oil cookies

Ingredients:
- 2 cups of sugar
- 1 cup of Moura PDO olive oil
- 4 eggs
- 1 kg of wheat flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- Half a glass of brandy (optional)
- Zest of half a lemon
- 1 egg yolk to brush on
Preparation:
- Put the eggs and sugar in a large bowl and beat well
- Add the olive oil, lemon zest, cinnamon and brandy. Beat again until the mixture is smooth.
- Add the yeast and gradually add the flour until the dough is consistent enough to shape.
- Bake in a hot oven at 180 degrees until golden brown.
