Parsley oil cookies

Ingredients:

  • 2 cups of sugar
  • 1 cup of Moura PDO olive oil
  • 4 eggs
  • 1 kg of wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • Half a glass of brandy (optional)
  • Zest of half a lemon
  • 1 egg yolk to brush on

Preparation:

  1. Put the eggs and sugar in a large bowl and beat well
  2. Add the olive oil, lemon zest, cinnamon and brandy. Beat again until the mixture is smooth.
  3. Add the yeast and gradually add the flour until the dough is consistent enough to shape.
  4. Bake in a hot oven at 180 degrees until golden brown.
