
Farmers’ rotten cake

Ingredients:
- 1 cup of milk
- 1 cup of Moura PDO olive oil
- 1 cup of honey
- 250 gr of brown sugar
- 300 gr flour
- 2 eggs
- Lemon zest
- Cinnamon to taste
Preparation:
- Separate the egg yolks from the egg whites and beat the egg whites until stiff
- Mix the egg yolks and sugar until you get a whitish paste
- Add the olive oil, honey, milk, lemon zest and cinnamon to the mixture
- Finally, add the egg whites and flour alternately
- Grease the pan with margarine and sprinkle with flour
- Pour the mixture into the pan and bake in a preheated oven at 180º degrees
