Farmers’ rotten cake

Ingredients:

  • 1 cup of milk
  • 1 cup of Moura PDO olive oil
  • 1 cup of honey
  • 250 gr of brown sugar
  • 300 gr flour
  • 2 eggs
  • Lemon zest
  • Cinnamon to taste

Preparation:

  1. Separate the egg yolks from the egg whites and beat the egg whites until stiff
  2. Mix the egg yolks and sugar until you get a whitish paste
  3. Add the olive oil, honey, milk, lemon zest and cinnamon to the mixture
  4. Finally, add the egg whites and flour alternately
  5. Grease the pan with margarine and sprinkle with flour
  6. Pour the mixture into the pan and bake in a preheated oven at 180º degrees
