Codfish Teles style

Ingredients:

  • 4 cod loins
  • 8 medium potatoes
  • 3 eggs
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 5 cloves of garlic
  • 300ml Moura PDO Extra Virgin Olive Oil
  • Salt and pepper

Preparation:

  1. Heat the grill and put the peppers on to roast
  2. Wash the potatoes and boil them in salted water with the skins on
  3. Boil the eggs in water
  4. Crush the garlic and put it in a pan with Moura DOP olive oil over a low heat, without letting it boil.
  5. Cut the onion into half-moons and set aside
  6. Once the peppers are roasted, put them in a plastic bag and seal it. After cooling, peel them
  7. Bake the cod skin side down
  8. Remove the potatoes from the water and peel them
  9. On a platter, serve the potatoes, the peppers in strips, the eggs in slices and the shredded cod, cleaned of skin and bones
