Bacon broth

Ingredients:

  • 200g bacon
  • 100 g sausage
  • 100 g chorizo sausage
  • 1 onion
  • 3 cloves of garlic
  • 2 ripe tomatoes
  • 1 bell pepper
  • 3 medium potatoes
  • 4 eggs
  • 1 dl Moura PDO Extra Virgin Olive Oil
  • Pennyroyal to taste
  • Water to taste
  • Salt to taste

Preparation:

  1. Fry the meat in olive oil, remove and set aside
  2. In the same pan, add the onion, garlic and chopped pennyroyal and brown. Add the chopped tomatoes and peppers and sauté a little more.
  3. Add the potatoes and water until all the ingredients are covered. Cook for 5 minutes and add the whole eggs.
  4. Check the salt and seasoning. Serve with fried meats and slices of good Alentejo bread.
