
Bacon broth

Ingredients:
- 200g bacon
- 100 g sausage
- 100 g chorizo sausage
- 1 onion
- 3 cloves of garlic
- 2 ripe tomatoes
- 1 bell pepper
- 3 medium potatoes
- 4 eggs
- 1 dl Moura PDO Extra Virgin Olive Oil
- Pennyroyal to taste
- Water to taste
- Salt to taste
Preparation:
- Fry the meat in olive oil, remove and set aside
- In the same pan, add the onion, garlic and chopped pennyroyal and brown. Add the chopped tomatoes and peppers and sauté a little more.
- Add the potatoes and water until all the ingredients are covered. Cook for 5 minutes and add the whole eggs.
- Check the salt and seasoning. Serve with fried meats and slices of good Alentejo bread.
