
Cod stew

Ingredients:
- 2 onions
- Half a red bell pepper
- Half a green bell pepper
- 4 cloves of garlic
- 2 ripe tomatoes
- 1 kg of potatoes
- 1 bay leaf
- 1 sprig of parsley
- 1 chilli pepper
- 3 soaked cod steaks
- Salt and pepper
- 1 teaspoon paprika
- 1 dl white wine
- 1 dl Moura PDO olive oil
- Parsley for decoration
Preparation:
- Place the sliced onions and peppers in a large saucepan. Add the sliced garlic and tomatoes
- Add the peeled and sliced potatoes, bay leaf, parsley and chilli. Place the diced cod on top and season with salt, pepper and paprika
- Drizzle over the white wine and Moura DOP olive oil, cover the pan and simmer for about 35 minutes, stirring the pan occasionally. Serve garnished with parsley
- You can add 200g of prawn crumbs 10 minutes before the end of cooking time
