Cod stew

Ingredients:

  • 2 onions
  • Half a red bell pepper
  • Half a green bell pepper
  • 4 cloves of garlic
  • 2 ripe tomatoes
  • 1 kg of potatoes
  • 1 bay leaf
  • 1 sprig of parsley
  • 1 chilli pepper
  • 3 soaked cod steaks
  • Salt and pepper
  • 1 teaspoon paprika
  • 1 dl white wine
  • 1 dl Moura PDO olive oil
  • Parsley for decoration

Preparation:

  1. Place the sliced onions and peppers in a large saucepan. Add the sliced garlic and tomatoes
  2. Add the peeled and sliced potatoes, bay leaf, parsley and chilli. Place the diced cod on top and season with salt, pepper and paprika
  3. Drizzle over the white wine and Moura DOP olive oil, cover the pan and simmer for about 35 minutes, stirring the pan occasionally. Serve garnished with parsley
  4. You can add 200g of prawn crumbs 10 minutes before the end of cooking time
