Turkey with olive oil and herb sauce

Ingredients:
- 1 turkey weighing 4 kg
- 1 small onion
- 1 lemon
- 4 bay leaves
- Salt and pepper to taste
For the olive oil and herb sauce:
- Moura PDO Extra Virgin Olive Oil
- Salt and pepper to taste
- Zest and juice of 2 lemons
- 4 cloves of garlic
- Dried herbs
- Parsley
Preparation:
- Start by making the olive oil and herb dressing, adding a little salt and pepper to a bowl, a generous drizzle of olive oil, crushed garlic cloves, the zest and juice of the lemons, chopped parsley and the herbs and mix everything together very well. Wrap the turkey on the outside and set aside for at least 6 hours.
- Season the inside of the turkey with salt and pepper, add the peeled and halved onion, the halved lemon and the bay leaves. Drizzle with a drizzle of olive oil and cover with aluminum foil to keep the meat tender.
- Bake in a preheated oven at 180°C for 3 to 4 hours, basting every half hour with the broth itself, until almost done. 20 minutes before, remove the foil. It's ready when it's golden brown.
